FOUR SEASONS

The weather in Provence and especially here in the Gard, is variable and offers all year round it is a beautiful backdrop for each of the four seasons. The wind whispers through the lavender fields, the sun caresses your face. Provence, famous for its blissful Mediterranean climate at its best. But did you know that this paradise can also be fickle?

The Côtes du Rhône in the winter: a fairytale landscape.

Winter in the Côtes du Rhône is a magical season. Temperatures regularly drop to freezing point, causing the vineyard hills to be covered with a layer of frost. The vines, which are still bare during this period, seem to sleep under their white blanket. In the fields you see pruners who behave like… a colony of ants moving around and busy pruning the vines for the new season. The lavender fields, which turn so purple in the summer, are now covered with a white veil. In our holiday homes, the fireplace creates a cozy and warm atmosphere.

The perfect place to relax and enjoy the winter beauty of the Côtes du Rhône.

It’s the perfect time to enjoy long walks in the fresh air and enjoy local food dishes by the fireplace. The annual truffle market in Uzès (which always falls on the 3rd Sunday in January) is a recurring spectacle in which this black diamond is passed from hand to hand with some secrecy for spectacular prices.

The weather in Provence in May brings everything back to life, everywhere you see colorful flowers and green landscapes.

The temperature starts to rise slowly and the sun starts to shine more often. It is the ideal time to enjoy the nature and the picturesque villages in the area. It is also the time when the attics and garages are cleaned up and a lively energy is created that many people are involved in art and kitch collected over the years is exhibited in the well-known vide greniers and marche aux puces with the final highlight is the annual 5-day flea and antique market at Easter in Barjac, just 20 kilometers away from us. Suppliers from all over the country proudly come here to offer their wares for sale.

In summer, Provence is at its best, with bright blue skies and regular temperatures exceed 30 degrees.

Start the day early and treat yourself to a visit to one of the Provencal markets near us and enjoy the colorful stalls crammed with succulents fruit, shiny vegetables, artisanal cheeses, creamy tapenades, fragrant herbs and handmade soaps. The local farmers and artisans proudly present their harvest and creations.

Returned to your holiday home at Domaine Cadignac, full of the inspiration you gained at the market and with all the ingredients for a delicious meal, it’s time to relax. Enjoy the sunset by the pool, while you go about the day with a cooling drink in your hand. ORANGE, ROMAN CITY IN PROVENCE

With its rich history and historical sites, Orange, Roman city in Provence, is a must-visit destination for lovers of culture and history. Orange is a beautiful former Roman city located 18 km from domaine Cadignac.

ROMAN THEATRE OF ORANGE

The famous Roman theatre of Orange is one of the best preserved theatres of antiquity and is a UNESCO World Heritage Site. Built during the reign of Emperor Augustus, the Roman theatre is extremely well preserved. It features an amazing facade: 103 metres long and 37 metres high! A prime location for theatre at the time of the Romans, but still today thanks to its incredible acoustics. Every year, performances are staged in the Roman theatre; several performances are also scheduled for next spring, summer and autumn.

ARC DE TRIOMPHE OF ORANGE

Orange is partly known for its Arc de Triomphe which, like the Roman theatre, dates from the 1st century AD. This monument is one of the most beautiful and interesting surviving examples of an Arc de Triomphe.

HOUSE OF ORANJE-NASSAU

What many people do not know is that from the public park -Colline Saint Eutrope- you have a great view over the historic centre of Orange with its Roman theatre but also on the Rhone River. This park contains the remains of the city’s entire history, especially that of the castle of the Princes of Oranje-Nassau. The city has ties to the House of Orange-Nassau. In 1544, William of Nassau inherited this city from his cousin René of Chalon and became prince of Orange (Orange).

Discover traces of this rich past in the streets and squares of the town. A visit to Notre-Dame-de-Nazareth Cathedral (13th century) with its beautiful murals and stained-glass windows should not be missed.

Every Thursday morning you can taste the typical Provençal atmosphere during the market in Orange as you stroll past the stalls selling crafts and local products.

WALNUT TREE

a grateful guest: our bountiful walnut tree

There’s a special resident on the property just beyond our terrace: a majestic walnut tree. For years, it’s graced us with its shade and presence. However, it wasn’t always thriving. A towering French oak nearby had slowly begun to cast the walnut tree in its shadow, limiting its access to sunlight and air.

This spring, we decided to give the walnut tree a helping hand. With some careful pruning, we cleared away the excess branches of the oak, allowing more light to reach our walnut friend. We weren’t sure how it would react, but the results have been incredible! This season, the walnut tree is bursting with walnuts – a veritable bounty hanging from its branches. It seems our intervention has been met with great gratitude from this generous tree.

We’re thrilled to see the walnut tree flourishing and look forward to harvesting its delicious nuts. It’s a wonderful reminder of the interconnectedness of nature and the importance of creating a balanced environment for all living things to thrive.

Walnut caramel cake
cake pan with loose bottom of 22 cm diameter

ingredients dough:

300 gr flour
60 gr sugar
230 gr butter salted, chilled and cut into small cubes
3 tbsp ice-cold water or just enough to bring the dough together

ingredients filling:

200 gr granulated sugar
100 gr diced butter
200 ml whipped cream
200 gr walnuts or pecans

preparation:

Preheat the oven to 190˚C. Put the flour in the food processor with the butter and sugar and mix briefly until combined. Add the water and pulse until the grains start to stick together. Lightly dust your countertop with flour and pour out the dough. Roll it into a round piece about 5 cm bigger than your mould. Place the dough in the mould and press the edges well. Line your dough with a piece of baking paper and fill it with baking beans. Put in the fridge for 20 minutes.

After this, bake the filling blind for 15 minutes. Remove the beans and baking paper and bake for another 10 minutes or until the dough starts to turn light brown.

Meanwhile, prepare the filling: put the granulated sugar with 3 tablespoons of water in a pan. Put this on medium heat and stir until the sugar is completely dissolved. Now turn up the heat and do not stir. Let it boil until the sugar turns a dark caramel colour. Remove from the heat and add the butter. Stir this well until the butter is melted and add the whipping cream. Return to high heat and bring to the boil again. Simmer until it thickens slightly. Add the walnuts last. Pour the filling onto the bottom.

Put the tart in the oven for about 10-15 minutes or until the filling is bubbling vigorously. Remove the cake from the oven and let cool completely before cutting.

Lukewarm cherry soup for a nice evening in spring

This soup is very tasty as a special starter for a tasty meal in spring. Garnish with a spoon of crème fraîche if desired.

Spring - lukewarm cherry soup, thank to #landleven for the delicious recipy.

ingredients:

500 g cherries, washed and pitted weight
100 ml water
100 ml red wine
25 ml port
1 tbsp sugar
1 tbsp cherry jam
cinnamon stick (1)
piece of lemon peel (1)
some salt and freshly ground black pepper
some lemon juice to taste

preparation

Put the cherries in a pan along with all the other ingredients except the salt, pepper and lemon juice. Bring to a gentle boil and simmer for five to six minutes.

Remove the pan from the heat, remove the cinnamon stick and lemon peel and puree the soup smoothly with a hand blender or blender. Strain the liquid through a fine sieve.

Let cool to lukewarm or, alternatively, let the soup get nice and cold in the fridge.

Taste just before serving and season with salt, pepper and a dash of lemon juice.
